Black Baltic Moss belongs to the Rhodophyceae family, native to the cold waters around Northern Europe. Our sourcing comes from Kassari Bay in Estonia.

Its polysaccharides have been used as a substitute for agar when normal supplies from East Asia were cut off during World War II.

They are often described as a hybrid of kappa and beta carrageenan.
